Demerara sugar from Mauritius retains much of the flavor of the sugar cane. A more full bodied flavor than its white sugar counterpart, it makes for an excellent rich simple syrup.
Store in an airtight container. If sugar hardens, place it in a bowl and cover the bowl with a wet cloth until the sugar softens again.
